Not only in my household, but I also received so many messages from friends and blog readers about how much they loved it. That recipe inspired me to play around with fall ingredients to create the most delicious pumpkin spice cottage cheese protein pudding parfait! If you’re a pumpkin spice fan, you are going to LOVE this one! It’s as thick as pudding, perfect for the fall season, and packed with so many great healthy benefits. It was another toddler win, too! This recipe is gluten-free, free from refined sugars, and packed with protein—perfect for a nutritious snack or dessert that embodies the cozy flavors of autumn.

- 1/3 Cup Cashew Butter (or your favorite nut butter)
- 1/4 Cup Pure Maple Syrup (or your preferred sweetener)
- 1 Tsp Vanilla Extract
- 1/4 Tsp Sea Salt
- 1 Tbsp Cinnamon
- 2 Tsps Pumpkin Spice (feel free to add more if you love a strong pumpkin spice flavor)
- Graham Crackers (I used gluten-free graham crackers since I was making it for a gluten-free friend)
- TruWhip (I used the keto one!)
